Easy and quick, vegetables interchangeable
Ingredients:
Fresh spinach (5 handfuls)
Broccoli (2 handfuls)
Garlic (1 clove)
Small onion
--> chopped (I use a food processor for chopping)
Eggs (3-4 eggs)
Cottage cheese (200-300g)
Salt and pepper
Optional: cheese for gratinating
Preparation:
Place the chopped vegetables in a bowl, mix it with the eggs, season with salt and pepper, then add the cottage cheese.
Pour into a baking dish lined with baking paper and then sprinkle with cheese (optional).
Bake at 360 Grad Fahrenheit/ 180 degrees celsius for approximately 40-45 minutes. After baking, let the casserole dish rest in the oven for another 10 minutes.
Serve with a mixed salad or mashed potatoes. I prefer it pure.
