Chickpea Curry

Easy and fast.




Ingredients: Eggplant, diced small

Onions, cut into small pieces

Chickpeas, pre-cooked

Black beans, pre-cooked (alternatively: other beans)

Tomato paste

Curry paste (I chose a spicy curry paste)

Oil

Water

Optional: salt




Preparation: Sauté onions in oil until translucent Add the eggplant and sauté Add the beans, tomato paste, curry paste and water to the pan and simmer for 10 minutes.




Side dish: rice, bread. Enjoy it!
