Naked cheesecake

Very easy and quick to do.


140 g sugar

100 g margarine or soft butter

1 packet of vanilla pudding powder sifted to prevent lumps

4 eggs (separate the egg whites from the yolks, beat the egg whites until stiff)

1.5 teaspoon vanilla extract

Pinch of salt

0.5 teaspoon grated lemon peel

1 kg low-fat quark

1 teaspoon baking powder


Mix all the ingredients, except for the stiffly beaten egg white (below), well in the food processor. Then carefully fold the stiffly beaten egg white into the mixture.


Pour the mixture into a baking tin lined with baking paper, smooth the surface, preheat the oven to 335 degrees Fahrenheit and bake on the middle rack for around 60 minutes. If the surface starts to get color (my cake turned out a little too dark), then cover it with aluminum foil.

After baking, do not take it out of the oven, but leave it in the warm oven for 15 minutes with the oven door half open.
